You might ask yourself where you can get the best root beer around, and if you asked Michael, the owner of Stockholm’s; a brewpub in Geneva, IL, he will tell you that you don’t have to look much further than where he is at.
Right in the heart of downtown Geneva, at 306 W. State Street, there is a Scandinavian pub that has a plethora of delicious home-brewed beer, but one of its best kept secrets very well might be their root beer. “A lot of the root beers that are out there on the market today are either too sweet. . .or you got some guy who really wants to make a statement. . .mine is wonderfully balanced.” Michael said about his root beer.
While talking to Michael and sharing one of these delicious root beers we fell in love with how he created his masterpiece root beer. It began with him reading up on multiple old-fashion root beer recipes. He settled on four distinctly different recipes, and held a special event where no one over eight-teen was allowed to take part. Each participant got to try each recipe and vote for one to be the official root beer of Stockholm’s. During this process, as Michael called them, “a couple of enterprising young lads,” decided to mix a couple of their glasses together for the fun of it. “The recipe number two and recipe number four mixed together at a particular ratio tasted better than any one recipe by itself.”
Michael then began the process of finding the perfect ratio of these recipes as well as tweaking the ingredients. He experimented with how brown sugar and cane sugar compared with one another as well as the process of carbonating using yeast before finally settled on a final recipe on batch number seven.
Although we believe Stockholm’s root beer is one of its best kept secrets in the area this does not mean that it is under appreciated. Their root beer is the second best selling house-made beverage only behind their State Street Pilsner; which was their first brew on tap. “Whether you are a six-year old boy sitting with grandpa, or grandpa having a mug of root beer with his grandson. . .mine is wonderfully balanced, it is very approachable, very drinkable.”
If you are a lover of root beer (or even on the fence) you need to take a trip to Stockholm’s. With an excellent staff that is just as excited about what is going on at Stockholm’s as Michael is, be sure to come with an empty stomach because they also have a menu full of mouth watering options. “You have a lot of choices.
